I know I have not posted anything recently and truly I have just been too busy enjoying life to tell you about it. I know, just excuses but I promise to try to post more! I need to post little mans 7-9 month updates as well as some other things! I SWEAR I will get back to regular blogging next week or I will just come up with more excuses.. HA

Pinterest Project Tuesdays: Molton Chocolate Cake

Who doesn’t love desserts? I am mostly an ice cream person but give me a good Chocolate Molton Cake and I am sold! As you know, or you might not now, I love Pioneer Woman Ree Drummand. So when I saw a pin for her Homemade Molton Chocolate Cake, I just knew I had to make it!

IMG_6931I was so excited to give this a try that I actually went out the day I saw the pin to get the chocolate to make them that night!! It really was easier to make then I ever thought it would be. I always thought it would be a difficult dessert to make at home so I never attempted it but Ree Drummand’s recipes tend to be easy to follow so I thought I would give it a try. Here is the pin that inspired me.

photo-21Like I said earlier, this pin takes you to Ree Drummand’s website, The Pioneer Woman. I pretty much followed exactly what she did, but instead of serving with whipped cream, I did vanilla ice cream. Here is what I did.

What you will need:

  • 4 Squares of Semi-Sweet Baking Chocolate
  • 1/2 cup of Butter
  • 1 cup of Powdered Sugar
  • 2 Whole Eggs
  • 2 Egg Yolks
  • 6 tablespoons of Flour
  • Vanilla Ice Cream
  • Cooking Spray
  • Cookie Sheet
  • 4 Custard Cups

IMG_6906First thing you do is preheat the oven to 425. Then spray the 4 custard cups with cooking spray and place on cookie sheet. Make sure you spray them liberally.

IMG_6907 IMG_6908Then microwave chocolate and butter for 1 minute until butter is melted.

IMG_6910Then whisk melted butter and chocolate together.

IMG_6911 IMG_6912Then add powdered sugar and whisk together.

IMG_6913 IMG_6914Next add the 2 whole eggs and the 2 egg yolks and whisk together.

IMG_6920 IMG_6922Evenly distribute batter into the 4 custard cups. Bake for 13-14 minutes.

IMG_6924Remove from oven and let sit for 1 minute. Invert cakes onto plate and serve warm with ice cream.

Tough is a good word for it

Tough. I am having a tough time dealing with the fact that my family is so far away. I am having a tough time dealing with the fact that I miss out on things that they do together. I am having a tough time dealing with the fact that they miss out on things I do here in Texas. I am having a tough time dealing with the fact that they are missing out on things with Little Man.

OLYMPUS DIGITAL CAMERA 00368 00819 IMG_1475I don’t think I realized how much I really miss seeing my family until they came to visit me and then went home. I have been one to say that I am not that close to my family but to be honest it is not that at all; I think that was my way of coping with the fact that I couldn’t be that close to my family. So saying I wasn’t close to them made me feel better to a point because if I wasn’t close to them then I wouldn’t miss them. In reality I miss them every minute, moment, fun times, sad times, each and everyday! The moment they drop me off at the airport when I come to visit, I instantly want to book a ticket back for the next week. The same goes for them when I drop them off when they visit. I feel bad saying I wasn’t close to them but I was just in denial.

Florida May 2008 165 IMG_4817 IMG_8906 00241I know that this is just what I have to deal with since I live in Texas and majority of my family lives in Michigan. It’s just, well, tough! I hate to say that I took them for granted but maybe I did. Having Little Man now makes me reevaluate everything. My cousin Emily (who I really see more like a sister) came to visit for a couple of days and I just dropped her off at the airport a few hours ago. I missed her the moment she walked away and I wanted to go buy a ticket to go with her.

IMG_8592 00674 00837 00355At this point I am rambling but I just miss them. So from this moment, I am going to cherish every single moment, conversation, picture, text, whatever that I get from them because they are extremely important to me. I can’t wait to the next visit!
