Another Tuesday, which means two things 1) a new episode of Pretty Little Liars (YES) 2) Pinterest Project Tuesday! Keeping with the lemon theme, I thought I would post the Lemon Cupcakes that I made for my sister-in-laws bridal shower. My cupcakes are a Lemon Cupcake filled with Lemon Curd with a Lemon Buttercream Frosting garnished with Yellow Sugar and a Lemon Jelly Bean.
Here is the pin that inspired me for this weeks project. The pin takes you to Tom Kat Studios and their recipe calls for Cream Cheese Frosting but I thought the a buttercream would be lighter and went better with light flavor of Lemon.
Mine was really more of an inspiration then an exact copy of their recipe.
Here is what I did for my Lemon Cupcakes!
Here is what you will need for the Lemon Cupcakes:
- Boxed White Cake Mix
- Lemon Curd
First thing you want to do is mix according to the directions the Boxed White Cake Mix.
Then add 2 tablespoons of Lemon Zest to the batter. You can always add more or least based off your preference.
Then fill your cupcake liners and bake according to the package. There will be enough batter to make 24 cupcakes.
Once done, remove and let cool. You can see the Lemon Zest in the cupcakes.
Once the cupcakes are cool, you want to core out the center. Make sure you don’t go all the way through the cupcakes.
Then fill each cupcake with about a teaspoon for Lemon Curd. You can find Lemon Curd in the jelly section for your grocery store.
While the cupcakes where cooling I mixed my frosting.
Here is what you will need for the Lemon Buttercream:
- 1/4 cup of Heavy Whipping Cream
- 3 tablespoons of fresh Lemon Juice
- 1 teaspoon for Lemon Zest
- 1 cup of Unsalted Butter, softened
- 3 cups of Powdered Sugar
- 1 teaspoon of Vanilla
- 1/4 teaspoon of Salt
Using your stand mixer fixed with the paddle attachment, on medium speed cream Butter until fluffy.
Once Butter is creamed, turn your mixer down and slowly start adding the Powdered Sugar.
Once Powdered Sugar is incorporated add in the Heavy Whipping Cream, Salt, and Vanilla. Beat until well mixed.
Then add in your Lemon Zest and Lemon Juice and beat until everything is well incorporated.
Top each cupcake with desired amount of frosting, sprinkle on Yellow Sugar (mine were a very light yellow which is hard to see in pictures) and a Lemon Jelly Bean or garnish to your liking.
I loved the way they looked and everybody said they tasted great!
