Over the weekend, I had my sister-in-laws bridal shower and I was in charge of making the desserts. I made these cookies a couple of times before and I thought they would be perfect for her shower since the theme included lemons.
They are super easy to make and people love them! Here is the pin that inspired me for these cookies!
The pin takes you to the blog Tidy Mom. She has lots of crafts and recipes to try! Take a look. I pretty much followed the recipe except my oven cooks things faster, so I don’t have to bake mine as long as it calls for.
Here is what you will need:
- Boxed Lemon Cake Mix
- 1 Egg
- Cool Whip (8oz container)
- Powdered Sugar
Preheat oven to 350°. With your stand mixer fitted with the paddle attachment, beat together the lemon cake mix, egg and cool whip.
The batter is pretty sticky and thicker then a normal cookie batter. Scoop about a tablespoon of batter and roll in powdered sugar.
Place on a parchment lined cookie sheet and bake from 8-12 minutes depending on your oven.
Remove, let cool and enjoy! They are super easy to make and you can make other variations. I have used Strawberry and Orange cake mix. Any cake mix will work really!
