Pinterest Project Tuesday – Lemon Cupcakes

Another Tuesday, which means two things 1) a new episode of Pretty Little Liars (YES) 2) Pinterest Project Tuesday! Keeping with the  lemon theme, I thought I would post the Lemon Cupcakes that I made for my sister-in-laws bridal shower. My cupcakes are a Lemon Cupcake filled with Lemon Curd with a Lemon Buttercream Frosting garnished with Yellow Sugar and a Lemon Jelly Bean.

IMG_0929Here is the pin that inspired me for this weeks project. The pin takes you to Tom Kat Studios and their recipe calls for Cream Cheese Frosting but I thought the a buttercream would be lighter and went better with light flavor of Lemon.

photo-6Mine was really more of an inspiration then an exact copy of their recipe.

Here is what I did for my Lemon Cupcakes!

Here is what you will need for the Lemon Cupcakes:

  • Boxed White Cake Mix
  • Lemons
  • Lemon Curd

IMG_0852First thing you want to do is mix according to the directions the Boxed White Cake Mix.

IMG_0854Then add 2 tablespoons of Lemon Zest to the batter. You can always add more or least based off your preference.

IMG_0866Then fill your cupcake liners and bake according to the package. There will be enough batter to make 24 cupcakes.

IMG_0867Once done, remove and let cool. You can see the Lemon Zest in the cupcakes.

IMG_0871IMG_0872Once the cupcakes are cool, you want to core out the center. Make sure you don’t go all the way through the cupcakes.

IMG_0909IMG_0911Then fill each cupcake with about a teaspoon for Lemon Curd. You can find Lemon Curd in the jelly section for your grocery store.

IMG_0914While the cupcakes where cooling I mixed my frosting.

Here is what you will need for the Lemon Buttercream:

  • 1/4 cup of Heavy Whipping Cream
  • 3 tablespoons of fresh Lemon Juice
  • 1 teaspoon for Lemon Zest
  • 1 cup of Unsalted Butter, softened
  • 3 cups of Powdered Sugar
  • 1 teaspoon of Vanilla
  • 1/4 teaspoon of Salt

IMG_0894Using your stand mixer fixed with the paddle attachment, on medium speed cream Butter until fluffy.

IMG_0895Once Butter is creamed, turn your mixer down and slowly start adding the Powdered Sugar.

IMG_0901Once Powdered Sugar is incorporated add in the Heavy Whipping Cream, Salt, and Vanilla.  Beat until well mixed.

IMG_0903Then add in your Lemon Zest and Lemon Juice and beat until everything is well incorporated.

IMG_0904Top each cupcake with desired amount of frosting, sprinkle on Yellow Sugar (mine were a very light yellow which is hard to see in pictures) and a Lemon Jelly Bean or garnish to your liking.

Dear Ali, I am not sure what is going on with you this week but enough with the going potty in your kennel…. PLEASE!!!! You are no longer a puppy and well beyond the potty training stage so please, please, please, get your act together!! You are not helping my morning sickness

IMG_0006Dear 3 Day Weekend, I love you! There is nothing like getting a whole extra day to get stuff done!

Dear February 9th, You are only 22 days away and that means in 22 days we get to find out if we are having a Boy or Girl!!!!

Dear Pretty Little Liars, The season premiere so far has been GREAT!! I hate when the episode ends and that I have to wait a whole week to see what happens! OH and can you please not make Toby part of the A team! HA Thanks!

15 Weeks

We had our 15 week appointment last week! We got to hear the baby’s heartbeat again and all my blood work came back great! We also scheduled our appointment to find out if we are having a Boy or Girl!!! 4 weeks to go! 🙂 Here is my 15 week update!

IMG_1116How far along? 15 weeks, baby is the size of an apple
Maternity clothes? Nope!
Stretch marks? Not yet
Sleep: I’m an sleeping pretty good except for when I have to get up to go potty
Best moment this week: Hearing the baby’s heartbeat!
Miss Anything? Sleeping all the way through the night with out going potty
Movement: None yet
Food cravings: Not really, maybe a Coke every now and then
Anything making you queasy or sick: Raw meat! Also, jerky and sausage. The smell makes me gag and I can’t even look at it!
Gender: Not sure yet but we made our appointment to find out!
Labor Signs: No
Symptoms: Heartburn and morning sickness
Belly Button in or out? In
Wedding rings on or off? On
Mood: Excited
Looking forward to: Finding out the gender!

Pinterest Project Tuesdays – Lemon Cookies

Over the weekend, I had my sister-in-laws bridal shower and I was in charge of making the desserts. I made these cookies a couple of times before and I thought they would be perfect for her shower since the theme included lemons.

IMG_0892They are super easy to make and people love them! Here is the pin that inspired me for these cookies!

photo-5The pin takes you to the blog Tidy Mom. She has lots of crafts and recipes to try! Take a look. I pretty much followed the recipe except my oven cooks things faster, so I don’t have to bake mine as long as it calls for.

Here is what you will need:

  • Boxed Lemon Cake Mix
  • 1 Egg
  • Cool Whip (8oz container)
  • Powdered Sugar

IMG_0874Preheat oven to 350°. With your stand mixer fitted with the paddle attachment, beat together the lemon cake mix, egg and cool whip.

IMG_0879The batter is pretty sticky and thicker then a normal cookie batter. Scoop about a tablespoon of batter and roll in powdered sugar.

IMG_0882IMG_0884Place on a parchment lined cookie sheet and bake from 8-12 minutes depending on your oven.

IMG_0888 IMG_0887 IMG_0886Remove, let cool and enjoy! They are super easy to make and you can make other variations. I have used Strawberry and Orange cake mix. Any cake mix will work really!

Dear Bachelor, I am so happy you are back! There was so many things in this weeks episode that just made my week! I’m not going to lie, I am bummed 50 Shades Girl didn’t make it. She would have brought pure joy and entertainment every week. I vote for her as the next Bachelorette!

Pinterest Project Tuesday – Memory Jar

I can’t believe that it is already 2013! OKAY, now that is out lets move forward. HA Today is Tuesday, so what does that mean?? It’s time for Pinterest Project Tuesday! The project that I did this week was something that I have wanted to do for a long time and I thought it was perfect for my first Pinterest Project of the new year! We have a lot coming up this year and I didn’t want to miss or forget  anything so I thought making a Memory Jar would be perfect!!

photo-4The pin takes you to the blog called The Pampered Sparrow by a lovely lady from the United Kingdom. She shows different examples of jars. Check out her blog! She has lots of great stuff

Here is what I did to make my jar!

What you will need:

  • Glass Jar
  • Pen
  • Scrap Paper
  • Sticker Maker
  • Chalkstock Label
  • Chalk

DSC04174The first thing I did was run a Chalkstock Label though my sticker maker. If you do not have one of these you can use tape or hot glue to make your label stick to the glass.

DSC04176DSC04177When you run the Chalkstock through the sticker maker, you are left with a sticker on one side and Chalkstock on the other.

DSC04190Super easy right and super cute! It’s the perfect project to hold all your precious memories through the year. We are going to open our jar on New Years Eve 2013 and relive all the wonderful things from the year.

Book Review x Two

One of my 30 before 30 goals was to read 30 new books. Last month I was able to read two new books! Normally I read more than that but going to bed by 8 slowed me down. People warned me that I was going to be tired when I got pregnant but it was still a shock!

I have previously read Lauren Conrad’s series LA Candy and I loved them. So when she came out with another series, I knew I had to  read them as soon as possible! The first book of this series is The Fame Game! It was somewhat the same concept as LA Candy but it was different. There were a couple of familiar characters, but for the most part it was a new character list.

The second book I read was the second book of the series, Starstruck: A Fame Game Novel.

My Review:

Over all, I loved both books and I cannot wait for the third one to come out! I would recommend these books to anyone who liked her first series, as well as anyone who likes reality TV. It’s a unique look into reality TV and there is a character for everyone to love. You want a quick read, grab one of Lauren’s books!

Friday Letters

Dear Friday, Thank you for coming quick this week. Even though it was a short week, I was ready for you so that I can catch up on my sleep from last weekend.

Dear Christmas Tree, I love seeing you every year but I dread taking you down this year. If you could just wrap and box yourself up that would be fantastic!

Dear Morning Sickness, I don’t understand where you came from. I had none of you during the first trimester then boom here you come during the second trimester. I would be okay if you went away.

Dear Baby Ripple, We are so excited to hear your little heartbeat next week again and hopefully we can get to see you too!

Dear Blog, I am trying to decide if I should switch from to .org…. If something could give me a sign that would be helpful.

Dear Nene Leakes, Thank you for always bringing pure joy and laughter to my week!
