Reese’s Peanut Butter Cup Cookies

For those who don’t know me, I love to cook and bake! The funny part about that is I don’t eat half of the stuff that I make though. I know that the key to making something good is by trying it but I just use my husband as my guinea pig! HA

Anyways, I had a request a work to make something with peanut butter. The only thing I could think of was the traditional Peanut Butter Cookie with the Hershey Kiss on top. So I started thinking about what I could do with Peanut Butter and then it hit me! I could take my Chocolate Chip Cookie Recipe and alter it a bit. BOOM now I have the Reese’s Peanut Butter Cup Cookie recipe.

Here’s what ya need!

2 1/4 cups of all-purpose flour

1 teaspoon of baking soda

1 teaspoon of salt

1 cup (2 sticks) of unsalted butter, softened

3/4 cup of granulated sugar

3/4 cup of brown sugar

1 teaspoon of vanilla

2 eggs

2 cups of the mini Reese’s Peanut Butter Cups

Directions:

Preheat oven to 375°F and gather up your ingredients!

In a medium bowl mix together the flour, baking soda and salt and set aside.

In your stand mixer with the paddle attachment, cream together the butter, sugar, brown sugar and vanilla until fluffy. It is very important that your butter is softened.

Once that is fluffy, beat in 1 egg at a time incorporating each egg well.

Once eggs are incorporated, add in the dry ingredients slowly.

Once everything is added, remove the bowl from the mixer. Using a spoon or a spatula, add in the mini Reese’s Peanut Butter Cups. You do not want to use the mixer for this because it will break the cups apart.

Using a tablespoon, place the dough balls about an inch apart on your baking sheets.

Bake for 8-9 minutes. Make sure you watch these though because the cups will burn much faster than chocolate chips.

Once done let cool and you are good to enjoy!
